I pondered this while enjoying my cream of potatoe soup with shredded cheddar cheese, and other added veggies.

I love cream of Broccoli as well.

But the more I thought about it the one thing I tend to put in ALL of my meals is onions.

Chopped up in a salad, soup, mashed potatoes, pasta dish, stir fry, meatloaf, on sandwiches, even my own sad but tasty blooming onion.

Please NOTE I say MY meals. I live with a bunch of picky eaters who prefer breaded EVERYTHING and I'm sick of that. Only Little M has what I call a normal palate of food preferences.

While I enjoy onions I dispose onion soup.

I coukd say soup is my comfort food but if it doesn't have onions in it, it's just not good. I guess that means for me it's onions.

What's your comfort food?

My 2 favorite go to for comfort food are my tortilla soup, and beef burgundy.

I make a killer potato soup with smoked sausage that I could eat every night.

But for total decadent self-indulgence… there is a local fast food chain called Rush’s that has a hot fudge cake. Omg it is the best. 2 layers of fudge cake with vanilla ice cream in the middle and on top. Topped with hot fudge sauce, whipped cream and a cherry.

DS is bringing me one later tonight. 😊

Yes I want to try that cake but that potatoe soup sounds wonderful as well!

I make an amazing Broccoli salad. I could eat it every day. Oh so good!

The soup is so easy I’m almost ashamed 😂

If you have an Instant Pot or other pressure cooker…

3lbs red potatoes, quartered

1-2 tablespoons olive oil

1 bunch of green onions (or more to taste) chopped

1-2 tablespoons of fresh minced garlic

A whole lot of rosemary

Salt and pepper to taste

1 lb smoked sausage sliced

A big handful of grated cheddar or cheddar and Jack mixed

32 oz chicken or vegetable broth

1 pint half and half or heavy cream

Using the sauté feature add oil to pot once it is hot

Add green onion, garlic and rosemary to oil and sauté for about a minute. Hit cancel

Add potatoes, salt, pepper and broth and place cover on top. Turn to seal and make sure valve is set on “Sealing” Use manual setting and set to 12 minutes. Once the timer is up, allow 15 minutes natural pressure release.

Release any remaining steam and open lid carefully. Add grated cheese, sausage and cream/half and half. Stir until cheese is melted and potatoes are slightly mashed.

That’s it.

Cheeseburger Happy Meals and canned chicken corn chowder soup. Yeah, mom wasn't a good cook nor caretaker to her children when they were sick. Today, when shook her finger at me because I'm coming down with something. Really mom? 🙄

But these are the foods that I remember from my childhood that bring me comfort.

Me: BW, 57, two awesome grown sons. Remarried in 2010. That lasted 11 years.WXH: Not even a blip on my radar anymore. I'm glad he's messing up the OW's life now and leaving me alone. D (with cause) in 2004.

Potatoes of all kinds. Mashed potatoes, roasted potatoes, baked potatoes, twice baked potatoes, potato soups, potato chips, potato salads, potato pancakes, French fries, home fries, hash browns, tater tots, pierogis, knishes...

I'm a potato soup person too! But I like southern cornbread with mine.

I eat very little meat but when I DO have meat (burger or steak), I have to have onions and bell peppers with it.

I'm a hound for cupcakes and Nestle's crunch bars! And sliced apples that I eat with Milky Way candy bars.

I also like sharp cheddar cheese with crackers. And chips, salsa and queso. Oh yeah - and those midget sweet pickles!

It's after 2:30 a.m. and I'm made myself hungry! laugh

Thank you for the recipe HFSSC. I dont have a pressure cooker or Instant pot, would a slow cooker work or just a big pot on the stove?

I do love potatoes but otjer than fries (for the kids) we haven't had much. Summers I try not to cook to much and heat up the house.

I am in love with Cucumbers! All the kids are too. I would usually grow them but didn't get a garden in this year. I buy a lot of them since the kids love them in their lunches. I saw a video that if you put sugar on them they taste like watermelon. It's close I guess but nothing beats an actual water melon. So yummy.

Chicken and noodles.

Roast beef with potatoes, carrots,and onions.

Fried potatoes with onions.

Mashed potatoes, mixed with carmelized onions(notice a theme here?)

For dessert..Mississippi mud cake, warm, with fresh whipped cream.

This thread is making me happy and hungry, Thx DragnHeart.

I second all who said potatoes. Mashed with gravy is my favorite, then baked and loaded, then hashbrowns filled with peppers, onions and cheese.

Toast with butter and honey makes me happy too. And pasta, all kinds, every way.

HFSSC, is smoked sausage the same as Kielbasa? Your soup sounds great.

Dragn, you could definitely use a slow cooker or cook in a Dutch oven or stock pot on the stove top.

Whatislove kielbasa is very close to smoked sausage and could substitute. I have also done it with chunks of ham but the sausage is my favorite.

Oh and my hot fudge cake was divine.

I love my instapot !!!
I can make a beouf burgundy that rivals Julia Childs in about 30 minutes with it.
There are many online recipes for the instapots.
I use it to make rice, that get added to the homemade dog food for my old lab. I use it to make hard boiled eggs that peel beautifully 100% of the time.
I use it to make chicken taco meat.
I make chicken tortilla soup that rivals the best ever (according to the family) with it.

Instapotsare wonderful. I own 2 an 8 quart one and a 6 quart one.

Oh yay! Instant Pot T/J!!

Chicken and brown rice. I have a basic recipe with equal parts rice and broth plus 1/4 cup water or broth and 4-5 boneless skinless chicken breasts.

Infinite variations. One of my favorites is wing sauce (or Texas Pete hot sauce), lots of garlic, salt, pepper and paprika. Start with sautéing green onion and diced celery in olive oil, add broth, rice, seasonings and chicken. 22 minutes on manual, natural release. Pull chicken apart with fork and mix well.

Just so yummy.

Lemon plus honey plus garlic and ginger is also a really good variation.

Chuck roast with potatoes, carrots and onions.

Stuffed green peppers.

My mom's cinnamon rolls and clover -leaf rolls.

My MIL's goulash.

They've both passed, and nothing compares to their dishes.

When I was young, we weren't supposed to wake up mom and step-father. When I was 6-7, I could read the directions on the Quaker Oatmeal box. I cooked oatmeal for the 4 of us so we didn't go hungry or wake the parents. When super-stressed beyond my limits, I go to oatmeal.
