My friend know I am team pumpkin spice and they laugh about it. And humor me with pumpkin vegan lattes
I am scrolling for recipes and am making pumpkin overnight oats and probably some vegan pumpkin creamer.
I am on a low fat plant based diet due to medical reasons, thus the vegan focus.
When my fiance gets a chance I am hoping he will make and freeze a double batch of his famous pumpkin bars this weekend! Yumm

Will be following this thread with interest, as my pie pumpkin crop is about ready to pick, store and/or give to friends...it wouldn't be worth the gas for you to come pick some, I don't suppose, but you could. I planted them to have on hand for my finicky pup when he gets tummy problems and vet books order 'feed soft food' for days. Pumpkin is healthier than white rice.
But I may have overdone things with 10 hills....we lost count how many we see out there, but they are smallish!

I love pumpkin!!
I make pumpkin oatmeal cups from the Skinny Taste website.
I also like pumpkin muffins and pumpkin bread.
My sister made me a delicious pumpkin cake for my birthday.

Pumpkin foodie here!
Pumpkin lattes, pumpkin muffins, pumpkin bread, pumpkin cake, anything and everything pumpkin.
Every year for years at Christmas, I'd make a pumpkin cake recipe from Paula Deen. It had cream cheese icing, everyone raved about it. Haven't made it in probably 6-7 years, now I'm going to search for the recipe!

I like PSL, pumpkin bread or muffins, but pumpkin pie isn't my favorite. My mom used carrots instead of pumpkins, which I liked. I like sweet potato pie better.
Crazy, isn't it?

My family doesn't like pumpkin pie so we have pumpkin cheesecake instead. I can't eat cream cheese anymore but when I could it was delicious!!
I have never had any of the pumpkin drinks but would love to try one. It would have to be dairy free and not loaded with sugar. Is that possible?

Zebra,
There are alternative milks at starbys but the sugar content is all pretty high. Same with most commercial creamers.
I found some pumpkin creamer recipes so we are going to try to make one this weekend. I am thinking of subbing something like maple syrup for the sugar. Still high sugar technically I guess. I sometimes use stevia so might try a batch with that too.

Thanks Shehawk. The milk alternatives would probably work!! I'm dying to try one but I'm afraid I'll really like it. I don't need to be drinking a lot of extra calories.

Not a huge pumpkin fan. Don't need all things pumpkin and coffee should be coffee.
But there's benefit to feeding pers pumpkin. It is a natural dewormer. Fed it to my chickens in the fall and all they left was a thin layer of the skin.

I'm not a pumpkin fan, either, but I can vouch for overnight oats. I do recommend good oats, though, with as little processing as possible - not the textureless stuff that comes in cylinders you buy at a supermarket.

I like the theory of all the cozy pumpkin things, but the actual taste doesn't live up to the hype for me. I'm Team Apple. 🍎

Team Apple too. I like the tart and sweet with the spices. I don't eat them much anymore. My WH had a gout episode a few years ago, and that's one of the foods he has nearly stopped eating.
I love pumpkin seeds year round, so thank you all for eating the pumpkins. Pumpkin pie texture is a bit yuck. Pumpkin itself as a vegetable is a bit too sweet for me, like sweet potatoes and those big Mexican carrots.

I've never liked pumpkin pie either, although I do have a recipe for a pumpkin chiffon pie with a gingersnap crust that is to DIE for.
I like sweet potatoes, but only savory, with salt and pepper and maybe some bacon. Sweet potato hash is YUMMY. I don't want the kind with marshmallows or candied pecans on top.
I've been buying cans of Pillsbury puff pastry, slicing the dough into strips, and wrapping it around apple rings that have been tossed with cinnamon and sugar. It's SO GOOD.
I also love dipping apple slices in caramel dip. We used to make caramel apples when I was a kid, but the thought of biting into one now makes my teeth hurt! lol

Sacredsoul I have been really enjoying making Caramel Apples where I get a Carmel dip and spoon it into the divit where the core is removed or just have it as a dip. No biting into the whole apple…saw it in some food blog I think.

I don't do scary either! I stuck my fingers in my ears, screwed my eyes shut, and loudly sang "I've Been Working on the Railroad" when my friend tried to get me to watch Friday the 13th at her house. I did one haunted house - as an adult - and hated it. Never again!

A local farm supply store has medium-large pumpkins on a pallet outside, with a sign announcing "Great Price" $8.99. Great price for whom? Wow.
